PRINCESS CAKE
 
Is a pastry made on sugar cake with a good filling in between which usually consists of cream and some type of jam, With a good covering of marzipan, usually green, the original recipe appears in the Princess's new cookbook from 1930 Which was compiled by home economics teacher Jenny Åkerström.
 
Åkerström taught girls at Östermalm in Stockholm and had, among other things, the four princesses daughters of Prince Carl, and Princess Ingeborg of Denmark In the book, the cake is called green cake, but it was later named princess cake.
